I finally got around to installing the APEX'i N1 Coilovers I had sitting in the shed into Sarah's R33; and it got me thinking about suspension options for the E21.
To me, it looks like the front setup from an R33 would easily be adapted to suit the rear of an E21. I may come back to that later.
I found a set of 60mm lowering springs while perusing ebay.de, but i'm not convinced that they're the best option.
In addition, I found the below post which intrigues me as it sounds like a relatively cheap way of converting the existing set-up to a coil over, allowing a choice of spring rates and adjustability.

The front is going to pose the biggest issue I think.
